This very delicious take to the Italian classic. So simple to make and best done ahead of time and kept refrigerated until it is time to serve. This helps the flavours infuse into each other and creates an intense delicious dessert for you or your guest.

Ingredients

  • 75ml marsala

  • 250g tub mascarpone

  • 300ml strong coffee, made with 2 tbsp coffee granules and 300ml boiling water

  • 175g pack sponge finger

  • 25g chunk dark chocolate

  • 2 tsp cocoa powder

  • 5 tbsp golden caster sugar

  • 568ml pot double cream

-When I went on the hunt to several shops for "Marsala" which is a liquor used in this recipe, everyone thought I was after some sort of curry. (I know) hahahah So here is what to look out for incase you go looking too.

Method

  1. Pour Mascarpone, Cream and Sugar in a big bowl and whisk together till they're completely combined and look like thick whipped cream.

  2. Put your coffee into a shallow dish.

  3. Get your serving dish on the ready.

  4. Then Dip in a few on the sponge fingers one at a time, turning for a few seconds until the finger are nicely soaked but make sure they're not soggy. (They'll fall apart)

  5. Layer them into the serving dish. You would probably have used about half the biscuits by now.

  6. Spread over half the creamy mixture over the top of the soaked biscuits.

  7. Using the coarse side of a grater, grate some chocolate over the top.

  8. Repeat the layers of biscuit again.

  9. Finish with the rest of the Creamy Layer.

  10. Cover and Keep refrigerated for a few hours before serving or overnight. To serve, Dust With the Cocoa powder and grate over the remainder of the chocolate..

I found this recipe very simple and easy to make. It is a much simpler version of the Italian classic. It makes a delicious Sunday pudding or even a christmas dessert for the family. It is a fantastic recipe. Try it, you won't be disappointed. It is quite light, perfect and delicious even for a dinner parties too.

Tips:

1: If you're finding it difficult to find Marsala, Then how about improvising. I have known some people use baileys instead of marsala.

2: If you're for any reason allergic to coffee or don't like the taste of it, you can also try Using hot chocolate too.

Good Luck and Let me know how you get on if possible. Happy Eating and Best Wishes from the team. VanicksKitchen xoxo
