King Prawns & Yams

I was not quite sure what to have for dinner tonight then I remembered on my visit to London last week, my auntie gave me a piece of yam and so I looked around and got together several more ingredients to make a meal of it. You could say I simply made this recipe up but it turned out absolutely delicious. You don't have to eat the prawns with yams like I did. You can simply have them on their own, or with boiled rice, pasta, couscous , etc. You could also simply serve it with some salad or slices of bread depending on what time of day you're having this.

Ingredients:
1. Yams
2. Spring Onions
3: Chilli (Optional) Leave this out if you don't like chilli
4. Red Onions
5. Normal Onions
6. King Prawns
7. Mushrooms
8. Red & Greens Peppers
9. Avocado (Optional)
10. Olive Oil
11. Salt
13. Sunflower oil
14. Soya Sauce

Preparations: Making the Yams.
1. Peel the yam and slice it into circles then into half.
2. Wash and drain any excess water off the yams. Leave to sit or pat dry with kitchen towels.
3. Sprinkle a little salt over them.
4. Heat the Sunflower oil in a medium size bowl till it's hot.
5. Turn heat down a little and start by adding a few of the yam pieces into the hot oil. Remember not to add to many as the temperature will drop and your yams won't fry evenly.
6. Using a wooden spoon or fork, work your way around the yams while it's frying, turning them after every 2 seconds or so.
7. Fry until it's cooked. Take one out to try just to be sure it's fried evenly.
8. Take out and place onto a drainer or kitchen towel to remove any excess oil.

Making The King Prawns:
1. Wash and drain off any excess water off the prawns (Or simply pat off excess water using kitchen roll.
2. On a medium heat, put olive oil into a frying pan
3. Let it warm up then add your red onions and normal onions
4. While staring, make sure the onions are nicely fried and soft.
5. Add Mushrooms then chilli if you're using any.
6. Add some salt and continue to stir.
7. Take the prawns and add to mix and stir well.
8. After about a minute or two, add your chopped mixed peppers and spring onions and continue to stir.
9. Sprinkle a little Soya sauce over the top and continue to stir for another minute.
10. Take off heat and serve with yams.

Alternatively you can simply serve with some salad, boiled rice, pasta, couscous, potatoes , etc. It is entirely up to you how you eat this or what you serve it with. Mine went well with the fried yams and I will be keeping this recipe for another time. Best of luck in the kitchen. Let me know how you get on. Happy Eating xoxo
