Fish And Greens

I made this for dinner and I named it "Fish And Greens". I am sharing it with you because it turned out quite delicious and you might want to try it too. It is quite easy, simple and yummy.
Ingredients:
1: Fish Fillets (You can use any fish you want. I use Sea Bass Fillets)
2: Broccoli
3: Spinach
4: Olive Oil
5: Salt (Or Stock Cubes. Use one or the other. not both. you don't want it overly salty)
6: Chilli (I used Scotch Bonnet but you can use birds eye chilli
7: Tomato Puree (Optional)
8: Large oven tray (to cook everything in)

Preparation:
(Preheat Oven)
1: Wash fish and remove any excess water. (You can use kitchen roll to dap off water or leave to drip dry)
2: Mix Chilli, Olive oil, Salt or Stock cubes together.
3: Toss a hand full of Spinach onto the Oven tray (Make sure the tray is lined with grease proof sheet or Foil) This helps to keep juices of your fish and Veg intact)
4: Cut and toss the broccoli around the tray. (Preferably around the edges)
5: Place Fish on the Tray on top of the Spinach (Skin side up)
6: Using a kitchen brush, brush the Chilli Mixture over the the fish.
7: Flip the Fish to the other side and repeat the process. (Any excess chilli mixture will fall onto the Spinach which all adds to the flavour.
8: Pour any remaining mixture all over the broccoli and spinach and drizzle a little olive oil all over.
9: Reduce the oven temperature to about 160 Fan and Bake for 15 to 20 minutes.
10: Remove and Serve. You can eat this as it is or accompany with Rice or Potatoes. Enjoy!!

Broccoli: Broccoli also has high health benefit which include Boasting your immune System, Fights Birth Defects, Regulates Blood pressure, Fights Diabetes, Helps Prevent Cancer and Curbs overeating. It is also known to help Prevent Colds, and Promote Healthy Bones.
So I will say this again, these two amazing greens are two of my favourites.
