Bofrot aka Puff-Puff

Bofrot as it is called in Ghana or Puff-Puff in Nigeria is an African snack similar to a doughnut. There is a similar version in Southern and in Eastern Africa called Mandazi. The French also call this Beignet. The basic ingredient consists of: flour, sugar, yeast, water, salt and oil for deep frying. Bofrot is usually a popular breakfast snack amongst the elderly however you’ll find that most younger people consume these at anytime of the day or night. Like a Doughnut it’s quite yummy and can be pretty addictive. You can simply dust sugar over the top before eating or like me, spread some of your favourite chocolate spread over the top too. I have known certain people to eat these for lunch with some juice or porridge. These bad boys do make a lovely party snack too. Eating these brings me right back to my childhood. Often on my way from school sitting in my mums car and salivating over them through the window while I watched the local women make and sell these delicious snacks with such effortless frying skills. My cousins and I will fight over them whenever we had the chance to have them over at the house. They are simply yummy and making them at home not only makes the house smell gorgeous but it brings me such joy. What can I say, I'm a foodie. :)

Ingredients:

225g flour

1 Teaspoon Yeast

4 Teaspoon Sugar

50 g Soft/Melted Butter

Pinch of Salt

150 ml Luke Warm Water

1 Egg

1 Litre Vegetable or Sunflower oil for Deep Frying

1 Teaspoon Baking Powder

Pinch of powered Nut Meg or 3/4 teaspoon Grated Nutmeg

Half Teaspoon Vanilla

Method:

  1. Mix the sugar, water, and yeast in a bowl and set aside for 10-15 minutes or until it’s frothy at the top.

  2. In a separate bowl sift the Flour, nutmeg, salt, baking powder together.

  3. Make a well in the middle of the dry mix and add the yeast mix.

  4. add vanilla (If you’re using Vanilla) This is optional

  5. Add Soft/Melted Butter into the mix then add Beaten egg.

  6. Careful stir everything together making sure there are no lumps what so ever.

  7. Now Cover the mix with cling film or a damp cloth. Leave this to rest in warm cupboard for about 45 minutes to about an hour. (It will double in size)

  8. Put Sunflower or Vegetable oil in a deep pan on a medium heat.

  9. When The oil is hot, With a table spoon or your hands, Pinch the mixture into the oil one at a time and be sure not to put too much in. You don’t want to overload the oil as this will result to the oil dropping in temperature and this is make the dough oily.

  10. With a fork or a chop stick, continuously turn the balls in and around the oil until it’s golden on all sides.

  11. Remove them When they begin to look crispy and just golden brown and place on a kitchen roll to soak out any excess oil.

  12. Once this is cooled, sprinkle some sugar on the top as you would any doughnut or simply spread some melted chocolate one the top and enjoy. xoxo
